These smoked salmon cucumber bites are a great make ahead appetizer idea for your next gathering! Brunch gathering, BBQ, or classy evening, these are great at them all!

Epicure Lemon Dilly mix
You will notice my recipe uses an Epicure ingredient… the Lemon Dilly dip mix. This is a fantastic blend of herbs and spices that work SO well with salmon, cream cheese, and steamed veggies. Looking for something to add to your rice? The lemon dilly is nice on that too!

I find one jar lasts a really long time- it’s a delicious blend that is really worth taking the time to order. If however you need something right away, I’d suggest replacing the lemon dilly with dried dill, garlic, and lemon peel. It will not be the same, but at least you’ll get the idea.

The finishing touches
Those little brownish bubble looking things? Those are capers. Tiny little flower buds from the caper plant. Sounds exotic, but really they are easy to find in any grocery store. In ours it’s in the section with the pickles. Totally not a must in this recipe, but they do add to it.
Depending on what type of event this is for, I like to finish these off with fresh dill and some edible flowers to garnish.

Smoked Salmon Cucumber bites
An easy, classy appetizer, brunch or snack recipe. Great for formal and casual dining alike. Leftover cream cheese is great on bagels with cucumber, salmon and dill
Ingredients
- 8 oz cream cheese, softened block or spreadable
- 1 tbsp Epicure Lemon Dilly Dip mix (see comment for substitution if mix is not available)
- 1/2 cup mayonnaise low fat is completely okay. Can sub with sour cream
- 3 cucumbers, peeled cut into 1 inch thick coins, scoop out seeds leaving small bowl shape to pipe filling into
- 1 pkg smoked salmon as thin sliced as possible
- capers
- fresh dill for garnish, optional
Instructions

begin by peeling and preparing cucumbers. Cut into 1 inch thick coins, and using a melon baller or small teaspoon; scoop out flesh creating a small well in the cucumber. Rest on paper towel to drain

Stir together cream cheese, Lemon Dilly Dip mix (see note for substitutions), and mayonnaise or sour cream

Scoop mixture into piping bag or plastic bag with the tip snipped off

pat cucumbers dry
-
pipe cream cheese mixture into cucumbers

top with salmon, capers, fresh dill
-
These can be stored in the fridge for 24 hours.
