Finally, a snickerdoodle recipe that doesn't need cream of tartar. This recipe can be make with Epicure's delicious eggnog spice, or an equal amount of cinnamon can be substituted.
Preheat oven to 375 F
In a large bowl, cream together butter, white sugar, brown sugar, and lemon juice.
Add eggs, one at a time, beating well after each addition
In a separate bowl, stir baking powder, flour, salt and 1 tsp cinnamon. Stir into liquid ingredients and mix well
Roll dough by hand into 1 inch balls. Toss in Sugar/Spice mixture.
Place 1.5 inches apart on cookie sheet
Bake for 8-10 minutes at 375 degrees F.
Yeilds approx 5 dozen cookies
