Breakfast Pancake Puff

This is the answer to Sunday morning breakfast. Easy to measure out the night before, and quick to prepare for the oven. Bake this puffy treat up while getting ready for the day.

  • 1/2 cup butter See instructions
  • 2 cups milk
  • 5 eggs
  • 2 tsp vanilla extract
  • 2 cups all purpose flour
  • 1/4 tsp salt
  • Icing sugar (for serving)
  • Lemon juice (optional, for serving)


  1. Heat oven to 400 degrees F. 

    Add 1/2 cup of butter into 9x13 pan. Place this in the oven while the oven is preheating. Watch while oven heats- it should be melted and may be slightly browned, but should not burn. 

  2. In a blender, blend remaining ingredients for about 30 seconds

  3. When oven is heated, pour batter on top of melted butter in 9x13 pan

  4. Return to oven, bake for 25-30 minutes, until golden and puffy.
    Pancake will flatten slightly within a few minutes, but taste just as wonderful. 
    Serve with icing sugar and a squeeze of fresh lemon juice
